Asian Noodle Salad

  • 1 package Linguine Noodles, Cooked, Rinsed, And Cooled
  • 1/2 head Sliced Napa Cabbage, Or More To Taste
  • 1/2 head Sliced Purple Cabbage, Or More To Taste
  • 1/2 bag Baby Spinach, Or More To Taste
  • 1 whole Red Bell Pepper, Sliced Thin
  • 1 whole Yellow Bell Pepper, Sliced Thin
  • 1 whole Orange Bell Pepper, Thinly Sliced
  • 1 bag Bean Sprouts (also Called Mung Bean Sprouts)
  • Chopped Cilantro, Up To 1 Bunch, To Taste
  • 3 whole Scallions, Sliced
  • 3 whole Cucumbers Peeled And Sliced
  • 1 can (about 10 Oz.) Whole Cashews, Lightly Toasted In Skillet

  • FOR THE DRESSING:
  • 1 whole Lime, Juiced
  • 8 Tablespoons Olive Oil
  • 8 Tablespoons Soy Sauce
  • 2 Tablespoons (up To 3 Tablespoons) Sesame Oil
  • 1/3 cup Brown Sugar
  • 3 Tablespoons Fresh Ginger Chopped
  • 2 cloves Garlic Chopped
  • 2 whole Hot Peppers Or Jalapenos, Chopped
  • Chopped Cilantro

Preparation Instructions

Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix with tongs or hands and serve on a platter.

Note: dressing keeps for up to three days before serving, without cilantro.


Lettuce Wraps with Quinoa and Black beans

1 small onion - chopped raw
1 red or yellow pepper (washed, seeded, and chopped)
1/2 can black beans (rinsed and drained)
1 cup cooked quinoa
Spinach (optional)
1 cup salsa
1 avocado, diced
Black pepper (to taste)
Salt (to taste)
Bibb lettuce

1. Prepare onion and red pepper
2. In a large mixing bowl combine all ingredients above (except for lettuce wraps)
3. Once the mixture is combined, spread onto lettuce leaf, add some green dressing, wrap and enjoy!

Poppyseed Muffins

1/4 cup butter melted
3 1/3 Tablespoon olive oil
2 eggs
1/2 cup almond milk
3/4 cups brown sugar (or agave or honey)
1/2. teaspoon vanilla
1/2 teaspoon almond extract
1 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking powder
1 Tablespoon poppy seeds

Mix all ingredients together. Fill muffin papers 2/3 full.
Bake at 325 degrees for about 25 minutes.

Bran Muffins - Mom's recipe

1/2 cup extra virgin olive oil
1 cup brown sugar
1 cup apple sauce
3 cups whole wheat flour
2 cups flour
4 cups All-Bran cereal (Kellogs)
2 cups 100% Bran (Nabisco)
2 cups boiling water
1 teaspoon salt
1 quart buttermilk
4 eggs
5 teaspoons baking soda

Pour boiling water over 100% bran. Let stand while sugar and oil are mixed.
Add eggs & buttermilk. Add both brans and let sit while combining dry ingredients. Mix everything together.
Fill muffin papers 2/3 full and bake at 375 degrees for 20 minutes. Let cool and enjoy. Delicious with honey and one of the few things I use butter on!

Banana Bread - Moms recipe

1/2. Cup extra virgin olive oil
1 cup agave (or honey or maple syrup)
2 eggs
2 cups ripened mashed bananas (around 4)
1 teaspoon vanilla extract
2 cups whole wheat flour
1/2 t salt
1/2 teaspoon soda
1/2 teaspoon powder
1 cup nuts (optional)

Beat together oil, syrup and eggs. Mix in everything else.

Yield: 4 mini loaves
Bake at 350 degrees for 30/35 minutes

Pumpkin muffins or bread

1 (15 oz) can pumpkin purée
4 eggs
1 cup extra virgin olive oil
2/3 cup water
3 cups brown sugar
3 1/2 cups whole wheat flour
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon cinnamon
1 Ttablepoon nutmeg
1/2 teaspoon ground clove
1/4 teaspoon ginger powder

Mix wet ingredients together and then add all dry ingredients.
Spoon batter in muffin papers until about 2/3 full.
Bake at 350 degrees for about 25 minutes or until you stick it with a knife and it comes out clean.

If making bread fill 3 small loaves and bake at 350 degrees for 50 minutes.

Whole wheat bisquits

2 cups whole wheat
1 Tablespoon sugar
1 Tablespoon baking powder
1 teaspoon salt
1/4 cup apple sauce
1/4 cup extra virgin olive oil

Mix all ingredients, then add

1 cup almond milk


Bake 425 degrees for 8-10 minutes
